Strawberry Chia Seed Jam (Three Ingredients, No Cooking Required)

Am I the only one who was looking forward to a really chill summer and then was surprised by just how busy I was?

I fully expected to be bored this summer, but between joining an adult soccer team and everyone getting married, I’ve actually had a really full schedule. But not full in a way that is on an easy to follow schedule. I mean full as in there’s something different every night of the week, but I forgot to add it to my phone calendar so now it’s 4:25 and I’m about to leave work, but I don’t remember where I’m supposed to be at 5 PM.

 

Anyway…on to food.

As I’ve been learning more about sugar and it’s adverse affects on our body, I’ve been looking for ways to cut a little more of it out of my diet. However, watching my husband eat a PB&J every day is just a little bit too tempting, so I wanted to find a less sugary jam that I could make.

Also, the airflow in my home is turrrable so I wanted an option that didn’t require me using a stove. All you need for this is your blender!

Strawberry Chia Seed Jam

Step 1: Grab Your Ingredients

2 cups of chopped strawberries, 1 TBSP honey, 2 TBSP Chia Seeds, 1-3 TBSP water

Step 2: Add Honey, Chia seeds, Water, and 1/2 of the Strawberries to the Blender. Blend Until Smooth.

Add only as much water as you need to blend. That might only be 1 TBSP, which will help your jam be thicker.

Step 3: Add the Remaining Strawberries to the Blender and Pulse For 1 or 2 Seconds

This will give you a few berry bits to bite into. If you prefer super smooth jam, just add the other half of the berries in the second step.

Step 4: Pour Jam Into a Jar and Refrigerate

After about 5 to 10 minutes it will be ready to eat.

Keep your jam in the fridge. It will last about a week and a half.

Prep Time: 10 minutes
Cooking Time: 0
Total Time: 10 minutes
Yield: 1.5 cups

Ingredients

2 c             Chopped Strawberries
2 tbsp       Chia Seeds
1 tbsp       Honey
1-3 tbsp    Water

Instructions

  1. Add chia seeds, honey, water, and 1 c chopped strawberries to blender. (Only add as much water is necessary to blend.
  2. Blend for 1 minute or until smooth.
  3. Add remaining strawberries to blender.
  4. Pulse for 1 or 2 seconds.
  5. Pour jam into a jar.
  6. Refrigerate for 5-10 minutes.

Store your jam in the fridge. It should keep for about ten days.
